GENERAL DESCRIPTION:The Food Service Supervisor/Cook for the Martin De Porres Residence will oversee, manage and implement the food program provided for the students of our High School programs. This person will need to be in constant contact with the food service providers for our breakfast and lunch program at all campuses as well as understand the requirements of the Child Nutrition Program as directed by the New York State Education Department. The Food Service Supervisor/Cook will be responsible for management, compliance, and the overall running of the Residence kitchen, which also prepares meals for the High School program.MAJOR DUTIES AND RESPONSIBILITIES:Responsible for the preparing of all meals (breakfast, lunch, snacks) for studentsResponsible for the planning of menus and the ordering of all foods, kitchen equipment and supplies as approved by school administration from approved vendorsEnsure that menus comply with Child Nutrition Program standards.Ensure that menus are posted monthly on units and in the dining roomEnsure that appropriate food items and meal patterns which meet the requirements of the Child Nutrition Program are provided to our studentsEnsure that recipes, daily production records, inventories, weekly summary nutritional analysis data is readily available in a manner determined by the Child Nutrition ProgramComply with all health and sanitary requirements as issued by local governmental agencies dealing with food preparation, storage and cooking mandatesEnsure that meals provided are attractive in appearance, meet temperature requirements and have palatable flavorEnsure that leftovers are minimized to reduce food wasteEnsuring a clean and sanitary cafeteria and kitchen area are maintainedEnsure that the daily student participation meal count is undertaken with recorded data appropriately safeguarded for review and future analysisPlan and participate in educational programs insuring appropriate nutritional and wellness activities of interest for our studentsEnsure that universal precautions are followed by those handling food during school hoursAble to walk and stand for 90% of designated working hours.Able to lift loads in excess of 100lbs (cases of meat), and push loads over 300lbs (food carts)Ability to withstand cold temperatures of 45 to 20 degrees in walk-in refrigerators and freezers; and hot temperatures possibly over 100 degrees in cooking area.Able to climb stairs, bend, stoop, reach over shouldersEnsure that first aid equipment is present and visible in the food service areas at our schoolAnd all other job related duties as assigned by the Martin de Porres School administrationSUPERVISES:School Food ProgramFood Service workersStudent Food Service internOutside vendor RepresentativesQUALIFICATIONS EDUCATION:Minimum High School Diploma or Equivalency DiplomaVocational Training Certificate in Food Service ManagementFood Handlers Certificate/Safe-serveGraduate from a Cooking School program EXPERIENCE:2 year experience as cook in a school or similar settingMinimum of 3 years’ experience in food service industry SKILLS & ABILITIES:Demonstrated ability to follow all Federal and NY State food service, cooking, storage and sanitation guidelinesDemonstrated ability to obtain and store for review necessary food menus, production records, recipes, nutritional data analysis from contracted food service providerDemonstrated ability to obtain daily student participation count according to the criteria outlined by the Child Nutrition ProgramDemonstrated ability to work cooperatively with all school personnel, and studentsDemonstrate the ability to communicate effectively verbally and in writingDemonstrated ability to supervise, job train and job coach new ford service worker and student intern workersDemonstrated ability to insure a safe and sanitary work environmentDemonstrated ability to implement the school's Wellness ProgramDemonstrated ability to implement appropriate temperature controls that effect the delivery of any meal provided at our schoolDemonstrated ability to positively diminish the amount of food that is throw awayDemonstrated ability to provide staff, students and parent training activities that support Martin De Porres food and wellness programBasic data entry and computer skills===================================================================== This position description contains the major responsibilities required to perform this job.
