Distinguishing Features of the Class:This is routine work involving the responsibility for the preparation of food on a large scale. The work is performed under general supervision with leeway in carrying out the details of the work. The Cook may supervise several other staff members and instruct them in the proper food preparation. Does related work as required.Typical Work Activities:Prepares food in sufficient quantities to meet meal requirements and adjusts meals accordingly;Assists in maintaining equipment and facility according to high standards of cleanliness;Handles food in accordance with acceptable sanitary procedures;Times food preparation to meet meal schedules;Uses standardized recipes and portion control to prevent waste and assure high quality meals;Cleans, sweeps, mops and keeps all kitchen area in clean and safe working condition;Assists in keeping inventory up-to-date.Accepts food and/or supply deliveries and checks to be sure they are correct.Maintain and post accurate up to date data for records as called for by procedures;Maintain good working relationship with other kitchen staff and volunteers (if any).Ma be called upon to do some planning of menus, purchasing of food or perform other managerial duties.Full Performance, Knowledge, Skills, Abilities & Personal Characteristics:Working knowledge of basic large scale food preparation and cooking procedures, food values and nutrition; working knowledge of estimating quantities of food needed; ability to understand and maintain principles and requirements of sanitation and safety in handling food and equipment; ability to order and store food and supplies; ability to understand and follow written and oral directions; physical condition commensurate with the demands of the position, cleanliness, reliability; willingness to work evenings, weekends and fluctuating hours;Minimum Qualification:a) Graduation from high school or possession of a high school equivalency diploma and one (1) year of cooking experience in the preparation of food on a large scale; OR b) One (1) year of experience in the area of food service work. OR c) An equivalent combination of schooling, training and experience as indicated above.
