Cook Manager 2 Kingston High School and various locations as needed. 6:30 a.m. – 2:00 p.m. 7 Hours ½ hour unpaid break Special Training and Experience:Three to five years of experience in the preparation of food on a large scale: and Possession of an associate degree in applied science or business issued after completion of a two-year course in a technical institute with specialization in food, nutrition, or management. The job description and requirements:Cook Manager (2) Job DescriptionThe Cook Manager will be responsible for overseeing kitchen operations while maintaining a safe and sanitary work environment for the staff. The Cook Manager will prepare or direct the preparation of meals in accordance with the Kingston City School District, New York State Education Department and the New York State Department of Health.Key Responsibilities:Plans regular and modified menus according to established guidelines.Follows standardized recipes, portioning and presentation standards Completes and utilizes daily production worksheets and waste log sheets. Tastes completed meals to ensure quality.Trains kitchen staff in food preparation, safe handling, operation of equipment, storage, and work areas. Ensures that kitchen staff follows and completes schedules as assigned.Maintains inventory of food and non-food supplies to stay within established guidelines while assuring that necessary product is available when needed.Makes all decisions regarding utilization of leftover food products staying within guidelines for such products.Complies with federal, state and local health and sanitation regulations and department sanitation procedures as evidenced through local health department.Follows facility, department and district safety policies and procedures including occurrence reporting.Participates and attends departmental meetings, staff development, and professional programs, as appropriate. Preferred Qualifications:A.O.S Degree in Culinary Arts or Business degree and required experience.Minimum of three to five years of progressive culinary/kitchen management experience, depending upon formal degree or trainingExtensive catering experience a plusHigh volume, complex foodservice operations experience – highly desirableInstitutional and batch cooking experienceHands-on experience a mustComprehensive knowledge of food and catering trends with a focus on quality, production, sanitation, food cost controls, and presentationMust be experienced with computers; to include Microsoft Office, Nutrikids, Outlook, E-mail and the InternetServSafe certified – highly desirable
