BRENTWOOD UNION FREE SCHOOL DISTRICT52 THIRD AVENUEBRENTWOOD, NEW YORK 11717(631) 434-2331 POSITION: Head Cook Candidates must meet the Civil Service minimum qualifications.Responsibilities:General Statement of Duties: Supervises and participates in the operation of the school food program. Daily tasks require an in depth knowledge of all aspects of a school food service program. Specific duties may include but are not limited to include:· Daily onsite supervision of kitchen operation, workflow and staff. Give direction and feedback needed to ensure quality service· Inspect kitchens for consistency, sanitation and safety; reporting findings to department administration· Assist cook with proper use and cleaning to maintain kitchen equipment. Report and follow up of equipment needing repairs.· Assist cook to maintain safe and sanitary conditions in the kitchen working with department and custodial staff on site as required by local health department· Works with storeroom clerk and cooks to manage inventory control, ordering, rotating and receiving of food and supplies· Standardize department recipes and ensure consistent use in all kitchens. Ensure that staff is utilizing the proper serving utensils for proper portions and yield.· Participate in the preparation and distribution of meals throughout the district· Ensure meals adhere to menu to meet all State and Federal guidelines and appropriate substitutions are made when alternative foods need to be utilized in emergency situations· Work with cooks to determine allowable meals for students with special needs· Ensure pleasing presentation of meals on the serving line and when plating meals for students and customers· Assist cook with required paperwork including all aspects of HAACP, food production, financial responsibilities set forth in department policies and standard operating procedures.· Assist cook in training staff for district employment and to satisfy mandatory yearly professional training.Assists cook and staff in all aspects of Point of Sale Program and daily kitchen close out procedures· Monitor the preparation, delivery, set up and breakdown of catering functions· Fill in when and wherever needed to ensure efficient kitchen operation· Other duties as assigned by School Lunch ManagerMinimum qualifications four (4) years as a permanent CookNecessary Special Requirements- Maintain a valid Suffolk County Food Managers CertificateCandidates must meet the Civil Service minimum qualifications.
